Healthy Recipes that taste great!

Lately I have changed my attitude about food in an effort to lose the baby weight and to be healthy and fit. In the process I have discovered some great recipes that actually taste wonderful and are very satisfying. All these recipes we have tried and love:

Chicken Pepian – This was such a good alternative to a cream sauce AND there were tons of sauce leftovers so a few nights later I used it to make a whole wheat pasta and meatballs dish.

Thai Chicken Satay with Spicy Peanut Sauce – Easy to whip up and fun to dip into the peanut sauce, we loved this dish

Thai Style Halibut with Coconut Curry Broth – Substituted this with orange roughy instead of the halibut and it was very flavorful

Bootcamp Week 1

Many of you know that I am in bootcamp, yes that’s right. Every morning we have to be out there at 5:30am in the cold, wet, dark earth to undergo yet another systematic beating by our instructor. There are no bathrooms, they insist on not feeding us, we don’t get any down time, I can’t even call my family; it’s pretty fierce! We do drills, tests, circuits, push-ups, run…you name it.

Ok so I’m not in REAL bootcamp but a women’s fitness bootcamp. I wanted to finally shed my “baby weight” that was adorned to me as a result of my pregnancy. So we do meet 5 days a week at 5:30 am when it’s still dark out (whilst Patrick and Andrew are still snoring logs).

Anyway this was the first week and I made it! I am a little sore and tattered but I have learned to cope with my Costco-size bottle of IB Profen and plenty of coffee. The workout is pretty much insane but something keeps me coming back for more (besides the oodles of money I paid for the program). Along with it I have drastically altered my diet and am eating natural, healthy foods that are low in calories and sugars. Maybe I will post some of them on here since they are just too yummy to keep hidden.
